What is Awadhi Food?

The Bawarchis and rakabdars of Awadh invented the style of Dum cooking which is also known as the art of slow cooking. Awadhi food has a large variety of elaborated dishes like kebabs, kormas, biryani,roomali rotis and Warqi Parathas.

The Awadhi cuisine is originally from Uttar Pradesh’s Awadh region, which is a part of luck now.

Awadhi cuisine is highly influenced by Mughal cooking techniques. Mughal uses the art of slow cooking which tasted really good.

The richness of Awadhi food is because of the use of ingredients like Paneer, meat and rich spices cardamom and saffron. Lucknow is famous for its kebabs as the main part of Awadhi Food.

Avadhi Korma:

Korma is actually the name for the technique of braising meat.

Navratan korma is the famous Vegetarian korma dish . Non-vegetarian consists of chicken, beef or fish korma.

Awadhi Kebabs:

There are several varieties of popular kebabs in Awadhi cuisine like. Kakori Kebabs, Shami Kebabs, Boti Kebabs, Patili-ke-Kebabs, Ghutwa Kebabs, Galawat ke Kebabs and Seekh Kebabs are the famous varieties of Kebabs

The Kebabs of Awadhi cuisine are different from the kebabs of Punjabi cuisine. Awadhi kebabs are grilled on Chula and opposite to it Punjabi kebabs are grilled in a tandoor.

Therefore Avadhi kebabs are called as “Chula kebabs” and Punjabi kebabs are known as “Tandori kebabs”.

Avadhi Biryani:

The Awadhi Biryani is totally different than Hyderabadi one.

Biryani is made by cooking meat in ghee with aromatic spices and further, it is layered with meat. (Depending on the type of Biryani).Then it is sealed and cooked over low heat. The vegetarian version is called Tehri.

The Awadhi Biryani, unlike the Hyderabadi one, is simple and meaty wherein the rice and the meat are cooked separately and then mixed together. Some of the other dishes on the menu includes Dum Pukth Galouti Kebab, Mutton Boti Kebab, and Murgh-e-Kalmi
